Abundant Spring Vegetables

With all of the recent rains, the vegetable garden was overflowing with spring vegetables today. Lots of swiss chard, kale, tatsoi, fava beans, tatsoi and 1 head each of broccoli and cauliflower. The swiss chard and kale should last through the summer…but this was likely the last of the tatsoi. We have 1 head of broccoli left to pick, then maybe a few weeks more of side shoots. Cauliflower is always 50/50 for me in our weather. I have a few more heads growing and I am hoping that those will be pickable before the summer heat reaches us. The buttercrunch lettuce is starting to bolt…although no longer so tasty, the chickens will enjoy it as an early afternoon snack.
